First off, start with the best. I recommend you reading the Thrawn Trilogy, by Timothy Zahn, because that was literally the thing that kicked off the EU (Heir to the Empire, Dark Force Rising, The Last Command). Not only that, it introduces some of the best characters in the EU, not least of which is MARA FUCKING JADE.
Then, I recommend the X-Wing series, by Michael A. Stackpole and Aaron Allston (Allston's are the best, and you don't really need to read the Stackpoles to get them. I never did |D)
Truce at Bakura's also a good primer for the EU, since it's set directly after Return of the Jedi, and kind of helps ease you into seeing how we got from there to the Thrawn Trilogy, as well as the fallout from the Empire's defeat. The Courtship of Princess Leia is a must for a Han/Leia shipper, and also I recommend Shadows of the Empire (set between Empire Strikes Back and Return of the Jedi) for more Leia being awesome.
That should get you started! :D ALSO, HIGHLY RECOMMENDED ONCE YOU GET THROUGH THOSE: Luke Skywalker and the Shadows of Mindor, by Matthew Motherfucking Stover. He's only the best writer in the EU. Don't read it until you've got at least some EU under your belt, though, since it's got a lot of in-jokes and references to the rest of the canon (it's essentially a tribute to the whole canon, is what it really is).
